4-101.19: NonFOOD-CONTACT SURFACES of EQUIPMENT that are exposed to splash, spillage, or other FOOD soiling or that require frequent cleaning shall be constructed of a CORROSION-RESISTANT, nonabsorbent, and SMOOTH material. The walls in the walk-in cooler still have a portion that need to be finished. Facility has done some work on getting proper food grade wall material installed in the cooler. Provide for all edges and seams are covered and sealed. Complete and maintain by next routine inspection. |
